Skillet Summer Squash

Ingredients:

  • 4 slices bacon, cut into small pieces

  • 1 onion chopped

  • 2 pounds yellow squash, sliced diagonally 1/2 inch thick

  • 1 pinch salt and ground pepper to taste.

1. Cook and stir bacon in a skillet over medium heat until crisp, 8 to 10 min. Add onions and cook in the bacon drippings until softened, 3 to 5 minutes. Add squash, salt, and black pepper; stir to coat.

2. Cover skillet and cook squash mixture over low hear until tender, about 25 min.

Mango Salsa

Ingredients:

  • 1 Mango - peeled, seeded, and chopped

  • 1/45 cup finely chopped red bell pepper.

  • 2 tablespoons chopped cilantro

  • 1 fresh jalapeƱo chile pepper, finely chopped

  • 2 tablespoons lime juice

  • 1 tablespoon lemon juice.

Let sit for 30 minutes before serving.
